Sheet Pan Mediterranean Shrimp
Dinner in 30 minutes… YES PLEASE!
Ingredients:
1 lb shrimp (marinate your shrimp at least 30mins before cooking)
1 bunch asparagus
1/2 red onion, sliced
1 zucchini, sliced
1 cup cherry tomatoes, halved
1 can artichoke hearts, quartered
3 oz feta
Parsley (optional)
Recipe:
Preheat oven to 450 degrees
Add all veggies to sheet pan
Toss with Kara’s Greek Marinade, salt and pepper. Bake for 10-12 minutes
Add shrimp bake for another 6-10 minutes
Top with parsley and feta, and serve with a side of rice or quinoa
