Kale & Quinoa Salad
I love making this salad to have on hand for weekday lunches or a healthy snack! This dish is delicious as meal on its own or use it as a side dish with your favorite protein.
You can also make this a day before serving!
Ingredients:
1 cup Quinoa
Chopped Kale
1 Bell Pepper,(any color)
1/2 English Cucumber
8-16 oz Cherry Tomatoes
1/2 Small Red Onion
Olives
Banana Peppers (optional)
4-8oz Feta Cheese
Kara’s Greek Mariande
Sliced Almonds or Avocado for topping (optional)
Recipe:
Cook 1 cup quinoa per package instructions
Add chopped kale to a large bowl and massage the kale… yes, I said masssage! This helps break down the fibers so it isn’t as tough to eat. You could also use spinach as a substitute.
Chop up all veggies to similar size and add to salad bowl
Add cooked and cooled quinoa to salad bowl
Drizzle over Kara’s Greek Marinade and toss everything together
Top with toasted almonds, avocado or your favorite protein!
