Zucchini Patties
Zucchini patties are one of my favorite meals, especially in the summertime! I decided to mix it up and use Kara’s Greek Rub instead of my usual seasonings, and WOW it was perfect! Crispy outside with a tender inside and full of flavor.
These patties are a great low carb option and can easily be prepared gluten free.
Ingredients:
1.5 lbs zucchini
2 eggs
1 cup unseasoned Panko Crumbs (or unseasoned bread crumbs)
2 tsp Kara’s Greek Rub
1/4 cup Flour
2-3 tbsp grated Parmesan
1 medium Onion, finely diced
1-2 tsp Fresh Mint
1-2 tsp Fresh Dill
Ground Pepper
Olive Oil
Recipe:
Shred zucchini. Place a towel or a few paper towels in a strainer then add the shredded zucchini and a little salt.
Squeeze out the water in the towel to get it as dry as possible.
In a large bowl, mix together all the ingredients and form into patties
Optional: place patties in the refrigerator or freezer for 30 mins to make it easier to handle
Drizzle olive in a large cast iron (or any skillet) over medium heat
Cook patties for about 4 minutes each side
Serve with homemade tzatziki on the side and ENJOY
