Shrimp & Salmon Salad
Looking for an easy and healthy weeknight dinner idea? Try out this delicious shrimp & salmon salad that is packed with protein and full of flavor!
In this recipe we are using Kara’s Greek Marinade TWO ways - as a marinade and as a salad dressing!
Ingredients:
Peeled Shrimp
Sockeye Salmon
Mixed Greens
Pine Nuts, toasted
Tomatoes, halved
Bell Pepper, diced
Artichokes, quarteres
Feta Cheese, crumbled
Avocado
Kara’s Greek Marinade
Recipe:
Marinate shrimp and salmon for at least 30 minutes (we did almost 2 hours)
Grill seafood at 450 degrees: 3-4 minutes each side (we skewered the shrimp so it was easier to cook)
Before prepping your salad, roast the pine nuts on the stove for 5-10 minutes, until they start to turn a golden brown
Prep salad: start with mixed greens then add all the veggies, feta cheese and pine nuts on top
Drizzle salad with Kara’s Greek Marinade
Top with grilled shrimp and salmon
