Shrimp & Salmon Salad

Looking for an easy and healthy weeknight dinner idea? Try out this delicious shrimp & salmon salad that is packed with protein and full of flavor!

In this recipe we are using Kara’s Greek Marinade TWO ways - as a marinade and as a salad dressing!

Ingredients:

  • Peeled Shrimp

  • Sockeye Salmon

  • Mixed Greens

  • Pine Nuts, toasted

  • Tomatoes, halved

  • Bell Pepper, diced

  • Artichokes, quarteres

  • Feta Cheese, crumbled

  • Avocado

  • Kara’s Greek Marinade

Recipe:

  • Marinate shrimp and salmon for at least 30 minutes (we did almost 2 hours)

  • Grill seafood at 450 degrees: 3-4 minutes each side (we skewered the shrimp so it was easier to cook)

  • Before prepping your salad, roast the pine nuts on the stove for 5-10 minutes, until they start to turn a golden brown

  • Prep salad: start with mixed greens then add all the veggies, feta cheese and pine nuts on top

  • Drizzle salad with Kara’s Greek Marinade

  • Top with grilled shrimp and salmon

  • ENJOY!
