Sheet Pan Halibut

This easy and delicious sheet pan halibut uses our NEW Kara’s Greek Rub!

You can use any white fish for this recipe - halibut and sea bass are my favorites!

Ingredients:

  • 4 filets halibut (or fish of choice)

  • Kara’s Greek Rub (enough to cover filets)

  • 10 mini sweet peppers, sliced

  • 1 cup cherry tomatoes, halved

  • 1/2 yellow onion, thinly sliced

  • 2 lemons, sliced

  • Fresh thyme sprigs

  • Olive oil

  • Salt & Pepper

  • Lemon juice (after baking)

  • White wine (optional)

Recipe:

  • Preheat oven to 425 degrees

  • Combine sliced peppers, onions and cherry tomatoes in a bowl and toss with olive oil, salt and pepper

  • On a sheet pan (line with aluminum or drizzle with olive oil), arrange sliced lemon so you can lay the fish on top of it

  • Generously season fish filets with Kara’s Greek Rub and place on top of sliced lemons

  • Arrange veggie around the fish filets (optional: lightly drizzle white wine for extra flavor)

  • Bake at 425 degrees for about 15 minutes (adjust bake time based on thickness of fish)

  • Squeeze fresh lemon juice over fish and serve with quinoa and asparagus - or you favorite sides!
