Pasta Salad

This simple pasta salad is perfect for a potluck or summer cookout!

Tender pasta, crunchy veggies with creamy feta cheese tossed in Kara’s Greek Marinade makes this pasta salad the perfect side dish or easy weekday lunch.

Whip this up in less than 20 minutes OR you can prepare it the night before - I personally think the longer it marinates, the better!

Ingredients:

  • 1 package Bowtie pasta

  • 1 pint cherry tomatoes, halved

  • 1 English cucumber, diced

  • 1 bell pepper (any color), diced

  • 1/2 can quartered artichokes

  • 1/2 small red onion, diced

  • 1/2 cup pitted kalamata olives

  • 3 oz feta cheese, crumbled

  • 3/4 - 1 cup Kara’s Greek Marinade

  • Mint (optional)

Recipe

  • Cook pasta per instructions

  • While the pasta cooks, cut up all your veggies and set aside

  • Once the pasta is cooked, let it cool completely before assembling your salad

  • Combine your diced veggies, feta cheese and pasta in a large bowl

  • Add salt and pepper to taste, add in Kara’s Greek Marinade and toss everything together

  • Top it off with some fresh mint (optional)

  • You can serve this immediately, or wait a few hours to let the flavors marinate a bit before serving
