Grilled Chicken Pita

This recipe is bursting with flavor with its marinated and grilled chicken breast, warm pita, creamy tzatziki and fresh veggies!

Perfect for a quick dinner or easy lunch!

Ingredients:

  • 2 boneless skinless chicken breast

  • 1/2 Small red onion, sliced

  • 4 pieces pita bread grilled

  • 2 cups baby spinach or arugula

  • 2 medium slices tomatoes sliced

  • 1 avocado, sliced

  • Kara’s Greek Marinade

  • salt and pepper to taste

  • Fresh Dill (optional)

Homemade Tzatziki: mix all ingredients together and set aside while preparing pita sandwich

  • 1 cup plain Greek yogurt

  • Juice of 1/2 lemon

  • 1tsp minced garlic

  • 1 tbsp fresh dill, roughly chopped

  • Salt and pepper to taste

Recipe

  • Marinate chicken in Kara’s Greek Marinade overnight or at least 1 hour

  • Grill chicken on high for 6-8 mins each side (or until fully cooked)

  • Grill pita bread then spread homemade tzatziki, add arugula, tomatoes, onion, avocado and grilled chicken

  • Optional: Serve with a size of tzatziki and drizzle some more Kara’s Greek Marinade over top
