Grilled Chicken Pita
This recipe is bursting with flavor with its marinated and grilled chicken breast, warm pita, creamy tzatziki and fresh veggies!
Perfect for a quick dinner or easy lunch!
Ingredients:
2 boneless skinless chicken breast
1/2 Small red onion, sliced
4 pieces pita bread grilled
2 cups baby spinach or arugula
2 medium slices tomatoes sliced
1 avocado, sliced
Kara’s Greek Marinade
salt and pepper to taste
Fresh Dill (optional)
Homemade Tzatziki: mix all ingredients together and set aside while preparing pita sandwich
1 cup plain Greek yogurt
Juice of 1/2 lemon
1tsp minced garlic
1 tbsp fresh dill, roughly chopped
Salt and pepper to taste
Recipe
Marinate chicken in Kara’s Greek Marinade overnight or at least 1 hour
Grill chicken on high for 6-8 mins each side (or until fully cooked)
Grill pita bread then spread homemade tzatziki, add arugula, tomatoes, onion, avocado and grilled chicken
Optional: Serve with a size of tzatziki and drizzle some more Kara’s Greek Marinade over top
