Freezer Breakfast Sandwiches
I have been LOVING these freeze breakfast sandwiches with KG Rub!!
Takes 20 minutes to make and you have a quick, high protein, breakfast ready for the week. The KG Rub makes it super flavorful and you can customize each sandwich with cheese, avocado, hot sauce and more!
*TIP: use Dave’s Killer English Muffins or add cottage cheese to your eggs for added protein
Ingredients:
8-10 eggs
Dave’s Killer English Muffins (6-8 total)
Kara’s Greek Rub
1lb Ground Beef
Toppings (optional): sliced cheese, avocado, spinach, etc.
Parchment paper
Baking sheet
Recipe:
PREP:
Preheat oven to 350 degrees F
Line baking sheet with parchment paper
Brown ground beef and season with KG Rub (about 1 tbsp).
Whisk together 8-10 eggs in a large bowl and add in KG Rub (about 0.5 tbsp)
TIP: I like to add a little water to my eggs to make them more fluffy. You can also add cottage cheese at this point for added protein and a more creamy texture.
Add browned ground beef to lined baking sheet.
Pour whisked eggs over ground beef.
Bake in oven for 10-15 minutes (until eggs are cooked through).
While the eggs/ground beef are baking, toast your English Muffins and set aside.
Take a cup or round cookie cutter and cut out 6-8 egg patties.
Assemble the sandwiches with English Muffin, egg patty, cheese or any other toppings!
To Freeze:
Wrap each breakfast sandwich individually with parchment paper
Place is freezer Ziplock bag and store until ready to eat!
Dig In:
Simply pop frozen sandwich (with parchment paper) in microwave for 30 seconds, flip and heat for another 30 seconds
