Kale & Quinoa Salad

I love making this salad to have on hand for weekday lunches or a healthy snack! This dish is delicious as meal on its own or use it as a side dish with your favorite protein.

You can also make this a day before serving!

Ingredients:

  • 1 cup Quinoa

  • Chopped Kale

  • 1 Bell Pepper,(any color)

  • 1/2 English Cucumber

  • 8-16 oz Cherry Tomatoes

  • 1/2 Small Red Onion

  • Olives

  • Banana Peppers (optional)

  • 4-8oz Feta Cheese

  • Kara’s Greek Mariande

  • Sliced Almonds or Avocado for topping (optional)

Recipe:

  • Cook 1 cup quinoa per package instructions

  • Add chopped kale to a large bowl and massage the kale… yes, I said masssage! This helps break down the fibers so it isn’t as tough to eat. You could also use spinach as a substitute.

  • Chop up all veggies to similar size and add to salad bowl

  • Add cooked and cooled quinoa to salad bowl

  • Drizzle over Kara’s Greek Marinade and toss everything together

  • Top with toasted almonds, avocado or your favorite protein!
