Sheet Pan Mediterranean Shrimp

Dinner in 30 minutes… YES PLEASE!

Ingredients:

  • 1 lb shrimp (marinate your shrimp at least 30mins before cooking)

  • 1 bunch asparagus

  • 1/2 red onion, sliced

  • 1 zucchini, sliced

  • 1 cup cherry tomatoes, halved

  • 1 can artichoke hearts, quartered

  • 3 oz feta

  • Parsley (optional)

Recipe:

  • Preheat oven to 450 degrees

  • Add all veggies to sheet pan

  • Toss with Kara’s Greek Marinade, salt and pepper. Bake for 10-12 minutes

  • Add shrimp bake for another 6-10 minutes

  • Top with parsley and feta, and serve with a side of rice or quinoa
