Zucchini Patties

Zucchini patties are one of my favorite meals, especially in the summertime! I decided to mix it up and use Kara’s Greek Rub instead of my usual seasonings, and WOW it was perfect! Crispy outside with a tender inside and full of flavor.

These patties are a great low carb option and can easily be prepared gluten free.

Ingredients:

  • 1.5 lbs zucchini

  • 2 eggs

  • 1 cup unseasoned Panko Crumbs (or unseasoned bread crumbs)

  • 2 tsp Kara’s Greek Rub

  • 1/4 cup Flour

  • 2-3 tbsp grated Parmesan

  • 1 medium Onion, finely diced

  • 1-2 tsp Fresh Mint

  • 1-2 tsp Fresh Dill

  • Ground Pepper

  • Olive Oil

Recipe:

  • Shred zucchini. Place a towel or a few paper towels in a strainer then add the shredded zucchini and a little salt.

  • Squeeze out the water in the towel to get it as dry as possible.

  • In a large bowl, mix together all the ingredients and form into patties

  • Optional: place patties in the refrigerator or freezer for 30 mins to make it easier to handle

  • Drizzle olive in a large cast iron (or any skillet) over medium heat

  • Cook patties for about 4 minutes each side

  • Serve with homemade tzatziki on the side and ENJOY
